Ingredients
16 ounces dry 15 bean soup mix
8 cups water
1 large ham bone with meat
1 can (14.5 ounces) diced tomatoes
1 small onion, peeled and diced
2 cloves garlic, minced
1 teaspoon chili powder
2 tablespoons fresh lemon juice
Directions
Rinse the 15 bean soup mix under cold water and remove any damaged beans or debris.
Place the rinsed bean mix into a large crock pot.
Add the 8 cups of water to the crock pot with the beans.
Dice the small onion and mince the garlic cloves.
Add the ham bone with meat, diced onion, minced garlic, chili powder, and the can of diced tomatoes (with their juices) to the crock pot.
Stir all ingredients together to combine well.
Cover the crock pot and cook on low heat for 5 to 5.5 hours, or until the beans are very tender and begin to break down slightly.
Carefully remove the ham bone and any large pieces from the pot. When cool enough to handle, shred any meat from the bone and return the shredded meat to the soup, discarding the bone.
Stir in the lemon juice and taste the soup, adjusting seasonings as desired.
Serve hot in bowls and enjoy.
