Za'atar Lamb Chops with Mint Yogurt

Ingredients
1 1/4 pounds lamb chops (about 8 chops)
3 tablespoons za'atar spice blend
1 teaspoon salt
2 tablespoons olive oil
1/2 cup Greek yogurt
2 stems fresh mint, leaves chiffonaded
Directions
Pat the lamb chops dry with paper towels to remove excess moisture. This ensures better browning and crust formation.
In a small bowl, combine the za'atar spice blend with salt, mixing well to create an even seasoning blend.
Rub both sides of each lamb chop with the za'atar-salt mixture, pressing gently so the spices adhere to the meat.
Heat olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
Carefully place the seasoned lamb chops in the hot skillet. Do not move them for the first 3 minutes to allow a golden crust to form.
Flip the chops and cook for another 3 to 4 minutes until the second side is browned. The lamb should reach an internal temperature of 145°F for medium-rare doneness.
Remove the skillet from heat and let the chops rest for 2 minutes before serving.
While the chops rest, prepare the mint yogurt sauce by stirring the chiffonaded mint leaves into the Greek yogurt until evenly distributed.
Divide the cooked lamb chops between two plates and serve with a generous dollop of mint yogurt sauce alongside.
