Ingredients

500g ripe tomatoes, quartered

1 small onion, chopped

½ small carrot, chopped

½ celery stick, chopped

1 tsp tomato purée

pinch pinch of sugar

450ml vegetable stock

Directions

  1. Prepare the fresh tomatoes by rinsing them and cutting into quarters or halves. Peel and chop the onion into small pieces. Trim and chop the carrot and celery stick into roughly equal-sized pieces.

  2. Add the quartered tomatoes, chopped onion, carrot, and celery to your blender or soup maker. Pour in the vegetable stock and add the tomato purée and a pinch of sugar.

  3. Blend all ingredients on high speed until completely smooth and silky, approximately 2–3 minutes, depending on your blender's power. If using a soup maker, select the smooth soup function and allow the cycle to complete (typically 20–25 minutes).

  4. Once blending is complete, pour the soup into serving bowls. Taste the soup and adjust seasoning as needed: add salt and pepper to your preference, and a pinch more sugar if you prefer added sweetness. A small amount of additional tomato purée can be stirred in for deeper colour and flavour if desired.

  5. Serve the soup warm immediately. It pairs beautifully with crusty bread or a simple green salad.
