Ingredients
1/4 cup walnuts, chopped
2 medium apples, cored and diced
1 cup celery, diced
1/2 cup raisins
1/4 cup fat-free plain yogurt
1/2 teaspoon sugar
1 teaspoon lemon juice
Directions
Wash your hands thoroughly with soap and clean running water before beginning.
Preheat your oven to 350°F. Spread the chopped walnuts in an even layer on a baking sheet.
Toast the walnuts in the preheated oven for 12 to 15 minutes, stirring occasionally, until they are fragrant and evenly golden brown. Remove from the oven and set aside to cool.
Core the apples and cut them into bite-sized cubes. Dice the celery into similar-sized pieces. In a large bowl, combine the cooled toasted walnuts, diced apples, diced celery, and raisins.
In a small bowl, whisk together the plain yogurt, sugar, and lemon juice until smooth and well combined.
Pour the yogurt dressing over the apple and walnut mixture, then toss everything together gently until all ingredients are lightly coated.
Serve immediately, or cover and refrigerate any leftovers within 2 hours to maintain food safety.
