Ingredients

1 can (16 oz) Canned pink salmon, drained

16 Saltine crackers, crushed into fine crumbs

1 Egg, beaten

1 tablespoon Vegetable oil

Non-stick cooking spray

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. In a large mixing bowl, combine the drained salmon, crushed saltine cracker crumbs, and beaten egg. Mix gently until just combined.

  3. Divide the mixture into 8 equal portions. Shape each portion into a stick approximately 4 inches long and 1 inch thick.

  4. Lightly coat a large skillet with non-stick cooking spray.

  5. Add the vegetable oil to the prepared skillet and heat over medium heat for 1 to 2 minutes until the oil shimmers.

  6. Carefully place the salmon sticks into the hot skillet and cook for 3 minutes without moving them.

  7. Flip each stick and cook for an additional 3 minutes or until both sides are golden brown and the sticks are heated through.
