Ingredients
4 bone-in pork chops, approximately ¾ inch thick
1 onion, peeled and quartered
3 tablespoons olive oil
2 tablespoons fresh thyme, or 2 teaspoons dried thyme
1 teaspoon ground allspice
½ teaspoon cayenne pepper
½ teaspoon black pepper
1½ teaspoons kosher salt
1 teaspoon sugar
2 tablespoons fresh cilantro, chopped, for serving (optional)
Directions
In a blender or food processor, combine the onion, olive oil, thyme, allspice, cayenne pepper, black pepper, kosher salt, and sugar. Blend until the mixture is completely smooth, scraping down the sides as needed. Place the pork chops in a shallow baking dish and pour the marinade evenly over them, turning to coat all sides. Cover and refrigerate for at least 4 hours, preferably overnight, for the flavors to fully develop.
Remove the pork chops from the refrigerator approximately 30 minutes before you plan to grill, allowing them to come closer to room temperature for more even cooking. Preheat your grill to medium heat and lightly oil the grates to prevent sticking.
Place the marinated pork chops on the preheated grill, reserving any excess marinade. Close the grill lid and cook for 8 to 10 minutes, flipping the chops once halfway through cooking. Keep the lid closed as much as possible to maintain heat and smoky flavor. The chops are done when they feel firm to the touch and reach an internal temperature of 145°F when measured with a meat thermometer in the thickest part, not touching bone.
Transfer the grilled pork chops to a clean plate and cover loosely with foil. Let them rest for 10 minutes to allow the juices to redistribute throughout the meat, ensuring tender and moist results.
Arrange the rested pork chops on a serving platter. Sprinkle the fresh cilantro over the top if desired. Serve immediately with lime wedges on the side for extra brightness and flavor.
