Ingredients
220 grams Spaghetti pasta
2 teaspoons Olive oil
120 grams Thick-cut bacon, chopped into 1/2-inch pieces
70 grams Button mushrooms, sliced
70 grams Mild green pepper (such as Anaheim chile), sliced into rings
70 grams Onion, sliced
⅔ cup Ketchup
1 tablespoon Unsalted butter
2 teaspoons Soy sauce
½ teaspoon Black pepper
1 tablespoon per 5 cups water Salt for pasta water
Directions
Bring a large pot of water to a boil with 1 tablespoon of salt per 5 cups of water. Add the 220 grams of spaghetti and cook for 1-2 minutes less than the package instructions indicate, so the pasta will be slightly firm and finish cooking in the sauce.
While the pasta cooks, heat the 2 teaspoons of olive oil in a large frying pan over medium heat. When the pasta has about 6 minutes remaining, add the sliced onion and mushroom slices to the pan. Sauté, stirring occasionally, until the vegetables begin to brown lightly.
Add the chopped bacon pieces to the pan and continue cooking, stirring often, until the bacon begins to release its fat and starts to crisp slightly.
Add the sliced green pepper rings to the pan. When the pasta has about 1 minute of cooking time remaining, add the 2/3 cup of ketchup along with one ladle of the boiling pasta water to the vegetables and bacon.
Stir in the 2 teaspoons of soy sauce, 1 tablespoon of butter, and 1/2 teaspoon of black pepper. Continue stirring gently until the butter melts and the sauce becomes smooth and well combined.
Drain the cooked spaghetti and add it directly to the sauce. Gently toss to coat the noodles evenly. If the pasta appears too thick or the noodles start to stick together, add a splash more of the reserved pasta cooking water to loosen the sauce.
Continue cooking the dressed pasta in the sauce for another 1-2 minutes until the noodles are tender and the flavors are well combined. Divide among serving bowls and serve hot.
