Ingredients
2 Medium papayas, halved lengthwise and seeded
2 tablespoons Light brown sugar
¼ teaspoon Ground ginger
¼ teaspoon Cayenne pepper
1 Lime, cut into wedges
Directions
Preheat your oven to 375°F (190°C). Pat the papaya halves dry with paper towels to remove any excess moisture.
In a small bowl, combine the light brown sugar, ground ginger, and cayenne pepper. Mix until well blended.
Arrange the papaya halves skin-side down on a baking sheet. Divide the brown sugar mixture evenly among the four papaya halves, spooning it into the center cavity of each.
Roast in the preheated oven for 35 to 40 minutes, until the papaya flesh is very soft and beginning to caramelize slightly at the edges, and the sugar has melted into the fruit.
Remove from the oven and let cool for a few minutes. Serve warm with lime wedges on the side for squeezing over the roasted papaya.
