Ingredients
6 ounces soba noodles
1 large handful shishito peppers
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
1 tablespoon soy sauce or tamari
2 tablespoons thinly sliced scallions
1 tablespoon sesame seeds
1 small ripe avocado
1 tablespoon fresh lime juice (optional)

Directions
Bring a medium pot of salted water to a boil over high heat. Once boiling, add the soba noodles and cook until they reach an al dente texture, about 8 minutes.
While the noodles cook, heat a cast iron skillet or broiler to high heat. Place the shishito peppers in the dry, preheated skillet or under the broiler.
Roast the shishito peppers, stirring occasionally if using a skillet or watching carefully if using a broiler, until the skin is deeply blistered and charred, about 8 to 10 minutes.
Remove the peppers from heat and allow them to cool slightly. Cut off the stems and coarsely chop the peppers into bite-sized pieces.
Drain the cooked soba noodles thoroughly in a colander, shaking out any excess water. Transfer to a medium mixing bowl.
Add the chopped roasted shishitos, scallions, sesame oil, soy sauce, and rice vinegar to the bowl with the noodles. Toss everything together until well combined.
Halve the avocado lengthwise, remove the pit, and scoop the flesh onto a cutting board. Slice the avocado into thin pieces.
Divide the dressed noodles between two bowls or plates. Top each serving with sliced avocado and sprinkle with sesame seeds. Drizzle with lime juice if desired. Taste and adjust salt or soy sauce as needed.
Serve the noodles warm or at room temperature. The dish can also be customized with additional protein such as tofu, or a splash of sriracha for heat, if desired.
