Ingredients
12 oz. Dark rum
4½ bags Rooibos tea bags
32 oz. Warm water
8 oz. Mango juice
16 oz. Fresh mango, diced
Fresh mint leaves, for garnish
Directions
The evening before serving, submerge the rooibos tea bags in the warm water. Cover and refrigerate overnight to allow the tea to fully steep and develop its flavor.
On the day of the party, remove and discard the tea bags from the chilled rooibos infusion.
Pour the brewed rooibos tea, dark rum, and mango juice into a punch bowl or large pitcher. Stir gently to combine.
Add the fresh diced mango to the punch mixture and stir to distribute evenly.
Fill serving glasses with ice and ladle the punch into each glass, including some mango cubes. Top each drink with a fresh mint leaf for garnish.
Comments
A refreshing punch that scores well on availability and cost: mango, mint, and water are standard at any Charlotte grocer, and rooibos tea is widely stocked at Harris Teeter, Food Lion, and Kroger. The stated 15 minutes is honest for a drink that mostly requires steeping and assembly. At roughly $2 to $2.50 per serving with rum included, it's a reasonable party drink that easily scales to crowds. The main drawback is that this is strictly a same-night beverage—it does not reheat or store well once diluted—so it suits a specific entertaining occasion rather than weeknight meal planning.
