Ingredients
4 boneless center-cut pork chops (3/4 to 1-inch thick, about 6 ounces each), trimmed
1 teaspoon Kosher salt
1 Large egg
1 tablespoon Dijon mustard
½ cup Panko breadcrumbs
¼ cup Fine, dried breadcrumbs
¼ cup Finely grated Parmesan cheese
½ teaspoon Garlic powder
½ teaspoon Onion powder

Directions
Pat the pork chops dry with paper towels. Season both sides evenly with kosher salt.
In a shallow bowl, whisk together the egg and Dijon mustard until well combined.
In another shallow bowl, combine the panko breadcrumbs, fine breadcrumbs, grated Parmesan, garlic powder, and onion powder. Mix thoroughly.
Working with one pork chop at a time, dip it into the egg mixture, coating both sides. Allow excess to drip off.
Immediately transfer the egg-coated pork chop to the breadcrumb mixture. Press gently on both sides and edges until fully coated with the breading.
Repeat steps 4 and 5 with the remaining three pork chops.
Preheat your air fryer to 390°F for about 3 minutes.
Lightly spray the air fryer basket with cooking spray. Arrange the breaded pork chops in a single layer without overlapping.
Spray the top of each pork chop lightly with cooking spray to encourage even crisping.
Air fry at 390°F for 10 to 12 minutes, shaking the basket gently halfway through cooking, until the pork chops reach an internal temperature of 160°F when measured with a meat thermometer at the thickest point.
Remove from the air fryer and let rest for 2 minutes before serving.
