1 tablespoon olive oil
1/2 small onion, thinly sliced
2 teaspoons all-purpose flour
3 cups chicken broth
Salt to taste
1 teaspoon fresh chopped parsley (optional)
1/3 cup grated manchego or parmesan cheese (optional)
Directions
Heat the olive oil in a medium saucepan over medium heat. Add the sliced onion and cook slowly, stirring occasionally, for about 15 to 20 minutes until the onion becomes soft, golden, and caramelized.
Sprinkle the flour over the caramelized onion and stir well to combine, cooking for about 1 minute to remove the raw flour taste.
Pour in the chicken broth, stirring to blend smoothly with the onion and flour mixture. Increase heat to bring the soup to a simmer.
Reduce heat to low and simmer gently for about 5 minutes, allowing the flavors to meld. Season with salt to taste.
Ladle the soup into serving bowls. Top each bowl with fresh parsley and grated manchego or parmesan cheese if desired, and serve hot.
