Ingredients

4 cooked, cooled chicken thighs, shredded (about 3 cups)

2 tablespoons vegetable oil

1/8 cup low-fat yogurt

1 tablespoon curry powder

2 celery stalks, diced

1 apple, cored and diced

1/4 cup drained canned mandarin oranges

1/4 cup fresh cilantro, chopped

Directions

  1. Place the shredded cooked chicken in a large mixing bowl.

  2. Drizzle the vegetable oil over the chicken, then add the yogurt and curry powder. Stir well to coat the chicken evenly.

  3. Add the diced celery, diced apple, drained mandarin oranges, and chopped cilantro to the bowl.

  4. Gently toss all ingredients together until well combined.

  5. Cover the bowl and refrigerate for at least 1 hour and up to 3 days before serving to allow flavors to meld.
