Ingredients
4 cups fresh pineapple, minced
1 cup sugar
Directions
Combine the minced fresh pineapple and sugar in a large bowl. Stir until the sugar begins to dissolve and the mixture becomes juicy, about 2–3 minutes.
Let the mixture rest for 10 minutes, allowing the pineapple to release more liquid and the sugar to fully dissolve.
Pour or spoon the pineapple mixture evenly into 8 ice pop molds. Leave about ¼ inch of space at the top to allow for expansion during freezing.
Insert ice pop sticks into each mold according to the manufacturer's instructions, typically at the midpoint.
Place the molds in the freezer and freeze until completely solid, approximately 6–8 hours or overnight.
Remove from the freezer and run warm water over the outside of each mold for a few seconds to loosen the ice pops. Gently pull out the sticks to release the frozen pops.
Serve immediately or store in a freezer-safe bag for up to one month.
