Ingredients

1 package (10 ounces) frozen mixed vegetables

2 cans (14.5 ounces each) low-sodium stewed tomatoes

2 cans (14.5 ounces each) low-sodium vegetable or chicken broth

1 can (15.5 ounces) low-sodium beans, drained and rinsed

1 cup dry small pasta shapes like ditalini or elbow

Directions

  1. Pour the broth into a large pot and bring it to a boil over medium-high heat. This is a great job for a child to watch carefully with an adult nearby.

  2. Once the broth is boiling, carefully add the frozen mixed vegetables, stewed tomatoes with their juice, and drained beans. Stir everything together gently.

  3. Add the dry pasta to the pot and stir well to combine all ingredients. Return the soup to a boil.

  4. Reduce the heat to medium and let the soup simmer uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender but still holds its shape.

  5. Taste the soup and adjust seasonings with salt and pepper if desired. Ladle into bowls and serve hot.
