8 ounces Fresh chives
¼ cup Grapeseed oil

Directions
Blanch the fresh chives in salted boiling water for 1 minute until they turn bright green, then immediately transfer to an ice bath to stop the cooking process and preserve their color and fresh flavor.
Drain the chives thoroughly and gently squeeze out excess water using paper towels or a clean kitchen cloth.
Place the blanched chives into a blender and pour the grapeseed oil over them, then add a pinch of salt to taste.
Blend on high speed for 2 to 3 minutes until the mixture is completely smooth and has a uniform bright green color.
Strain the blended mixture through fine-mesh cheesecloth or a fine-mesh strainer into a clean container, pressing gently on the solids to extract as much oil as possible.
Transfer the finished chive oil to an airtight container and refrigerate until ready to serve. Use within 1 week for best flavor and color.
