8 fresh peaches, peeled and sliced
3 tablespoons Irish cream liqueur
2 tablespoons sugar
1 Zest of 1 lemon
2/3 cup all-purpose flour
2/3 cup light brown sugar
1/2 cup old-fashioned rolled oats
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon salt
6 tablespoons cold butter, cut into 1/4 inch pieces
Directions
Preheat your oven to 350°F. Lightly grease a 9-inch by 13-inch baking dish or similar 2-quart capacity baking vessel.
In a large mixing bowl, combine the sliced peaches, Irish cream liqueur, 2 tablespoons sugar, and lemon zest. Gently toss until the peaches are evenly coated and the flavors are well combined. Let this mixture sit for 5 minutes to allow the peaches to release their juices and absorb the Irish cream flavor.
Pour the peach mixture into the prepared baking dish, spreading it evenly across the bottom.
In a separate medium bowl, whisk together the all-purpose flour, light brown sugar, rolled oats, ground cinnamon, ground cardamom, and salt until thoroughly combined.
Add the cold butter pieces to the dry mixture. Using a fork or your fingertips, work the butter into the flour mixture until it resembles coarse breadcrumbs or sand. The mixture should be crumbly with no large butter pieces visible.
Evenly distribute the crumble topping over the peach filling, gently pressing it down slightly so it adheres but remains loose and textured.
Place the baking dish in the preheated oven and bake for 35 to 40 minutes, until the crumble topping is golden brown and the peach filling is bubbling gently around the edges.
