Crispy pan-fried tofu cubes combined with tender broccoli and spring onions in a glossy teriyaki glaze. This vegetarian Asian-inspired dish is served over rice or noodles for a satisfying meal.

Ingredients

1 tbsp olive oil

400g firm tofu, cut into bite-sized cubes

1 large head of broccoli, cut into florets with stalks peeled and thinly sliced

1 bunch of spring onions, separated into white and green parts and thinly sliced

8-10 tbsp teriyaki sauce

cooked rice or noodles, for serving

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the tofu cubes and cook for about 8 minutes, stirring occasionally, until the edges are golden brown and crispy on all sides. Transfer the cooked tofu to a clean plate and set aside.

  2. In the same skillet, add the broccoli florets and the sliced white parts of the spring onions. Cook for approximately 4 minutes, stirring frequently, until the broccoli is tender-crisp but still maintains some firmness. Pour in the teriyaki sauce and stir well to coat all the vegetables evenly.

  3. Return the cooked tofu to the skillet and gently fold it into the broccoli and sauce mixture. Cook for an additional 1-2 minutes, stirring gently, until all ingredients are warmed through and the flavors have melded together. Remove from heat, top with the reserved sliced green parts of the spring onions, and serve immediately over cooked rice or noodles.
