Spanish Tortilla with Chorizo

Ingredients
5 large eggs
6 medium potatoes, peeled and thinly sliced
1 spicy chorizo, casing removed and crumbled
1/2 medium onion, thinly sliced
1 cup olive oil
Salt to taste
Black pepper to taste
Directions
Peel and thinly slice the potatoes. Thinly slice the onion as well. Set both aside.
Heat the olive oil in a 10-inch non-stick skillet over medium heat. Once hot, add the sliced potatoes and onions. Cook, stirring occasionally, for 20–25 minutes until the potatoes are tender and golden but not crispy. The oil will soften the vegetables rather than fry them crisp.
While the potatoes cook, remove the casing from the chorizo and crumble the meat. In a small skillet, cook the chorizo over medium heat for 5–7 minutes, breaking it up with a spoon, until the fat renders and the meat browns slightly. Drain the chorizo on a paper towel and set aside.
Crack the eggs into a bowl and whisk them together with a fork. Season with salt and pepper to taste.
When the potatoes are tender, add the cooked chorizo to the skillet and toss gently to combine. Reduce the heat to medium-low.
Pour the beaten eggs over the potato and chorizo mixture, spreading them evenly. Gently stir a few times to distribute the ingredients, then let it cook undisturbed for 8–10 minutes until the edges and bottom are set but the center remains slightly liquid.
To finish cooking and set the top, place the skillet under a preheated broiler (or cover with a lid) for 3–5 minutes until the top is set and lightly golden. The eggs should reach an internal temperature of 160°F.
Remove from heat and let rest for 2 minutes. Slide the tortilla onto a cutting board, cut into 4 wedges, and serve warm or at room temperature.
