Ingredients
2 pounds potatoes (about 6 medium)
1 cup low-fat milk
3 tablespoons butter or margarine
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Peel the potatoes and cut them into 1-inch chunks to ensure even cooking.
Place the potato chunks in a medium saucepan and cover them with cold water by about 1 inch.
Bring the water to a boil over medium-high heat, then reduce to medium and simmer for 12 to 15 minutes, until the potatoes are fork-tender and easily pierced.
Carefully drain the potatoes in a colander and return them to the saucepan.
Using a potato masher or fork, mash the potatoes until most lumps are broken down and the texture is fairly smooth.
Pour the low-fat milk gradually into the mashed potatoes while stirring gently, adding just enough to reach your desired creaminess.
Stir in the butter, salt, and black pepper until everything is well combined and the butter is fully melted.
Taste and adjust seasoning as needed before serving warm.
