1/4 cup unsalted butter

1/4 cup vegetable oil

1 cup sugar

2 large eggs

1 cup buttermilk

1 tsp vanilla extract

2 2/3 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 tsp ground nutmeg, freshly grated

1/4 tsp maple extract

2 cups confectioner's sugar

maple syrup for thinning and glazing

Directions

  1. Preheat your oven to 350°F. In a large microwave-safe mixing bowl, melt the butter. Add the vegetable oil, sugar, eggs, buttermilk, and vanilla extract, then beat until well combined.

  2. Sift together the flour, baking powder, baking soda, salt, and nutmeg in a separate bowl. Add the sifted dry mixture to the wet ingredients and stir gently until just blended. Do not overmix, as this can result in tough doughnuts.

  3. Spray a doughnut pan with cooking spray. Transfer the batter to a large ziplock bag and snip off a 1/2 inch corner from one bottom edge. Pipe the batter into each hole until about 3/4 full. If using only one pan, bake in batches and thoroughly clean the pan between uses.

  4. Bake for approximately 15 minutes until the doughnuts have risen and are cooked through. Check doneness with a toothpick inserted into a doughnut—it should come out clean. The doughnuts will still be pale in color.

  5. Allow the doughnuts to cool in the pan for a couple of minutes, then transfer them to a cooling rack.

  6. Prepare the maple glaze by slowly adding maple syrup to the confectioner's sugar, stirring continuously until you reach a thick, pourable glaze consistency. Add the maple extract and stir well. Adjust the thickness by adding more sugar for a thicker glaze or more syrup for a thinner one.

  7. While the doughnuts are still slightly warm, dip each one head-first into the glaze, then give it a gentle twist as you lift it out. Place the glazed doughnuts, glaze side up, on the cooling rack to set. Serve immediately for the best flavor and texture.
