Ingredients
2 tablespoons butter
1/2 cup onion, diced
1 clove garlic, minced
1 tablespoon all-purpose flour
3 large ripe tomatoes, peeled, seeded, and chopped
1 cup milk
Salt to taste
Black pepper to taste
Directions
Melt the butter in a large skillet over medium heat.
Add the diced onion and cook, stirring occasionally, until softened and lightly golden, about 5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the onion and garlic mixture, stirring constantly to coat evenly and cook out the raw flour taste, about 1 minute.
Add the chopped tomatoes, stirring well to combine with the flour mixture. Simmer over medium heat for 8 to 10 minutes, stirring occasionally, until the tomatoes have broken down slightly and the flavors have melded.
Pour in the milk slowly while stirring constantly to avoid lumps, creating a smooth, creamy sauce.
Reduce the heat to medium-low and simmer gently for 3 to 5 minutes, stirring occasionally, until the gravy reaches your desired consistency and is heated through.
Season with salt and black pepper to taste. Serve warm over biscuits, toast, or mashed potatoes.
