Ingredients
2 tbsp Canola oil
1 clove Garlic clove, minced
½ medium Yellow onion, diced
1 large Red bell pepper, diced
1 tsp Chili powder
3 cup Meatless ground beef substitute
2 tbsp Tomato paste
2 cup Crushed tomatoes
1 8 oz can Canned kidney beans, drained and rinsed
1 cup Water
Salt
Black pepper
Directions
Heat canola oil in a large sauce pot over medium heat. Add diced onion and minced garlic, then cook for 3–4 minutes, stirring occasionally, until the onion becomes translucent and softened.
Stir in chili powder and diced red bell pepper. Continue to cook for 2 minutes, stirring gently, until the peppers begin to soften and the chili powder is fragrant.
Add tomato paste and meatless ground beef substitute to the pot. Stir well to combine and cook for 1 minute, allowing the flavors to meld.
Pour in the crushed tomatoes and kidney beans (with their liquid). Stir the mixture thoroughly.
Add water gradually, stirring to reach your desired consistency. You may not need all of the water if you prefer a thicker chili.
Reduce heat to low and bring the chili to a gentle simmer. Cook uncovered for 5 minutes, stirring occasionally, to allow flavors to blend.
Taste the chili and adjust seasoning with salt and black pepper as needed. Serve hot.
Comments
Beyond Meat ground beef is available at Harris Teeter, Food Lion, Publix, and Kroger, though it runs $6–8 per package versus $3–5 for conventional ground beef, driving the per-serving cost to roughly $3.50–4.00 before sides—noticeably higher than a traditional beef chili. The 25-minute claim ignores the sauté of aromatics and the simmer needed for flavors to marry; budget 35–40 minutes total. This is a straightforward, hands-off one-pot meal that reheats well, making it solid for weeknight families and meal prep, but the plant-based protein premium and modest flavor profile (no cumin, lime, or heat depth) position it as a weeknight workhorse rather than a standout dish.
