Ingredients

2 Tbsp Extra-virgin olive oil

1 lb Large shrimp, peeled and deveined

Kosher salt

Freshly ground black pepper

2 Tbsp Unsalted butter

1 Medium onion, finely chopped

5 Garlic cloves, finely chopped

2 Tbsp Double-concentrated tomato paste

2 lb Plum tomatoes, chopped

¼ cup Fresh basil, finely chopped

2 tsp Dijon mustard

1 tsp Sugar

½ cup Dry white wine

2 Tbsp Fresh lemon juice

¼ cup Fresh parsley, finely chopped

2 oz Crumbled feta cheese

Toasted country-style bread, for serving

Directions

  1. Heat the extra-virgin olive oil in a large ovenproof skillet over medium-high heat. Arrange the shrimp in a single layer, season with kosher salt and freshly ground black pepper. Sear for approximately 1 minute on each side, until the shrimp turn bright pink and are nearly cooked through to an internal temperature of 145°F. Using a slotted spoon, transfer the shrimp to a clean plate and set aside.

  2. Reduce the heat to medium and melt the unsalted butter in the same skillet. Add the chopped onion and cook, stirring frequently, until softened and translucent, about 3 minutes. Stir in the chopped garlic and cook, stirring constantly, until aromatic, approximately 2 minutes. Add the tomato paste and stir often until it darkens in color and caramelizes slightly, about 3 minutes.

  3. Add the chopped plum tomatoes, fresh basil, Dijon mustard, and sugar to the skillet; stir well to combine. Simmer, stirring occasionally, until the tomatoes break down and the juices reduce and thicken, 12 to 15 minutes.

  4. Pour in the dry white wine and fresh lemon juice, and continue cooking, stirring occasionally, until the sauce thickens further, about 5 minutes. Taste and adjust seasoning with salt and pepper as needed. Return the reserved shrimp along with any accumulated juices to the skillet, and gently stir in the chopped parsley. Remove from heat and scatter the crumbled feta cheese evenly over the top.

  5. Preheat the broiler to high. Place the skillet in the oven and broil until the feta is lightly browned in spots and the shrimp are heated through, approximately 4 minutes. Taste and season with additional salt if needed.

  6. Divide the shrimp and sauce among shallow bowls, garnishing with additional fresh parsley. Serve immediately alongside the toasted country-style bread for dipping and enjoying the rich sauce.
