Ingredients
2 tablespoons red or green bell peppers, chopped
1 tablespoon onion, chopped
1 large egg
1 thin slice deli ham, chopped
1 tablespoon water
1 slider-sized bun or whole wheat English muffin, split and toasted
Salt and pepper to taste
Directions
Place the chopped bell peppers and onion into a microwave-safe 8-ounce ramekin, custard cup, or small bowl.
Microwave on high power for 30 seconds. Stir the vegetables to ensure even cooking.
Crack the egg into the bowl with the vegetables, add the chopped deli ham and water. Whisk or beat the mixture vigorously until the egg is fully blended and incorporated with all other ingredients.
Microwave the mixture on high power for 30 seconds. Stir well to break up the egg and distribute ingredients evenly.
Microwave on high power for an additional 30 to 45 seconds, until the egg mixture is nearly set but still has a slight shine—do not overcook. The egg should reach an internal temperature of 160°F or be cooked through with no liquid egg remaining.
Season the scramble with salt and pepper to your preference.
Spoon the hot scrambled egg mixture onto the split, toasted slider bun or English muffin halves. Serve immediately while warm.
