1½ cups broccoli florets, coarsely chopped

½ cup carrots, grated

½ cup cauliflower florets, coarsely chopped

½ cup apple, cored and diced with skin intact

¼ cup green onion, sliced

½ cup nonfat vanilla yogurt

¼ cup unsalted dry-roasted peanuts, chopped

Directions

  1. Wash your hands thoroughly with soap and warm water before preparing the salad.

  2. In a large serving bowl, combine the chopped broccoli florets, grated carrots, and chopped cauliflower florets.

  3. Add the diced apple with its skin, sliced green onion, and nonfat vanilla yogurt to the vegetable mixture.

  4. Gently toss all ingredients together until well combined and evenly coated with the yogurt dressing.

  5. Cover the bowl with a lid or plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and develop.
