Grilled Barbecue Onion and Smoked Gouda Quesadillas

Ingredients
2 large yellow onions, thinly sliced
3 tablespoons olive oil
½ cup barbecue sauce
2 tablespoons water
1 teaspoon hot sauce, or to taste
8 flour tortillas
6½ ounces smoked Gouda cheese, coarsely grated
Directions
Preheat your grill to medium-low heat. Thinly slice the yellow onions and coarsely grate the smoked Gouda cheese, setting both aside.
Heat the olive oil in a large nonstick skillet over medium heat. Add the sliced onions and sauté for about 5 minutes, stirring occasionally, until they become soft and begin to caramelize.
Pour in the barbecue sauce and water, stirring well to coat the onions evenly. Cook for about 2 minutes until the mixture is heated through. Remove from heat and stir in the hot sauce to taste.
Lay out all 8 flour tortillas on a clean work surface.
Spoon a portion of the barbecue onion mixture onto half of each tortilla. Top with grated smoked Gouda cheese. Fold each tortilla in half to create a half-moon shape, pressing gently so the filling is contained.
Place the folded quesadillas directly on the preheated grill and cook for about 2 minutes until golden and crispy, then carefully flip. Grill the second side for another 2 minutes until the tortilla is toasted and the cheese is completely melted.
Remove the quesadillas from the grill and cut each one into thirds. Serve warm on a platter.
