Ingredients

1/2 head cabbage, shredded

1 can (15 ounces) fruit cocktail in juice, drained

1 cup non-fat plain yogurt

1 lemon, juice and zest

1/2 cup honey

1/4 cup vinegar

1 banana, sliced

1/2 teaspoon salt

1/8 teaspoon black pepper

Directions

  1. Wash your hands thoroughly with soap and water before preparing the salad.

  2. Rinse the cabbage head and remove the outer leaves. Using a sharp knife or mandoline, shred the cabbage into thin, uniform pieces until you have approximately 2 quarts.

  3. Drain the canned fruit cocktail over a colander, reserving the fruit and discarding the juice.

  4. In a small bowl, whisk together the non-fat yogurt, honey, vinegar, lemon juice, lemon zest, salt, and black pepper until well combined and smooth.

  5. Place the shredded cabbage in a large serving bowl. Add the drained fruit cocktail and sliced banana.

  6. Pour the yogurt dressing over the cabbage and fruit mixture. Toss gently but thoroughly with a large spoon or salad tongs until all ingredients are evenly coated.

  7. Serve immediately or refrigerate until ready to serve. If made ahead, store covered in the refrigerator for up to 2 hours to maintain the crispness of the cabbage.
