Ingredients
1/2 head cabbage, shredded
1 can (15 ounces) fruit cocktail in juice, drained
1 cup non-fat plain yogurt
1 lemon, juice and zest
1/2 cup honey
1/4 cup vinegar
1 banana, sliced
1/2 teaspoon salt
1/8 teaspoon black pepper
Directions
Wash your hands thoroughly with soap and water before preparing the salad.
Rinse the cabbage head and remove the outer leaves. Using a sharp knife or mandoline, shred the cabbage into thin, uniform pieces until you have approximately 2 quarts.
Drain the canned fruit cocktail over a colander, reserving the fruit and discarding the juice.
In a small bowl, whisk together the non-fat yogurt, honey, vinegar, lemon juice, lemon zest, salt, and black pepper until well combined and smooth.
Place the shredded cabbage in a large serving bowl. Add the drained fruit cocktail and sliced banana.
Pour the yogurt dressing over the cabbage and fruit mixture. Toss gently but thoroughly with a large spoon or salad tongs until all ingredients are evenly coated.
Serve immediately or refrigerate until ready to serve. If made ahead, store covered in the refrigerator for up to 2 hours to maintain the crispness of the cabbage.
