Ingredients
1 pound lean ground beef (85% lean)
4 medium potatoes
10 ounces frozen mixed vegetables
1/4 cup low-fat shredded cheddar or colby jack cheese
1/4 cup 1% milk
Salt and pepper to taste
Directions
Wash your hands thoroughly with soap and warm water before beginning meal preparation.
Heat a frying pan over medium-high heat. Add the ground beef and cook, stirring frequently, until browned throughout and no pink remains (internal temperature of 160°F). This typically takes 8–10 minutes.
Transfer the cooked ground beef to a colander and rinse under warm water while stirring gently to remove excess fat. Drain well and set aside.
Scrub the potatoes under cold running water to remove any dirt. Without peeling, slice them into 1/4-inch-thick rounds.
Arrange the sliced potatoes as the first layer in a large casserole dish.
Layer the frozen mixed vegetables over the potatoes, followed by the cooked ground beef, then sprinkle the shredded cheese evenly across the top.
Pour the milk evenly over the entire casserole.
Season the casserole with salt and pepper to your taste.
Cover the casserole dish tightly with a lid or aluminum foil.
Bake in a preheated 350°F oven for 1 hour, or until the potatoes are tender when pierced with a fork. Alternatively, microwave in a non-metal casserole dish on high for 19–23 minutes, stirring halfway through, until the potatoes are fully cooked.
