3 tablespoons extra-virgin olive oil or canola oil

1 pound 90%-lean ground beef

1 large onion, diced

4 cloves garlic, minced

8 ounces mushrooms, diced

½ cup bulgur

2 tablespoons Worcestershire sauce

2 tablespoons ancho chile powder

1 tablespoon chili powder

1 tablespoon paprika

2 teaspoons ground cumin

½ teaspoon salt

2 15-ounce cans no-salt-added kidney beans, rinsed

3 cups reduced-sodium beef broth

1 12-ounce bottle lager-style beer

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the ground beef and cook, stirring occasionally and breaking it apart with a spoon, until it is fully browned (160°F internal temperature), about 5-7 minutes. Drain off any excess fat if needed.

  2. Add the diced onion to the pot and sauté for 3-4 minutes, stirring occasionally, until it becomes softened and translucent.

  3. Stir in the minced garlic and cook for about 1 minute until fragrant.

  4. Add the diced mushrooms and stir well. Cook for 4-5 minutes, allowing them to release their moisture and slightly reduce.

  5. Sprinkle in the ancho chile powder, chili powder, paprika, cumin, and salt. Stir continuously for about 1 minute to toast the spices and distribute them evenly throughout the mixture.

  6. Pour in the Worcestershire sauce and stir to combine.

  7. Add the bulgur, beef broth, and lager beer to the pot. Stir well to combine all ingredients.

  8. Drain and rinse the kidney beans, then add them to the pot and stir.

  9. Bring the chili to a simmer over medium heat, then reduce heat to low. Cover partially and simmer for 60-70 minutes, stirring occasionally, until the bulgur is tender and the flavors have melded together. The chili should be thick and rich.

  10. Taste and adjust seasoning as desired. Serve hot in bowls.
