Ingredients

4 boneless, skinless chicken breasts, cut into bite-size pieces

knob butter, divided

100g fresh asparagus, cut into bite-size pieces

100g spring vegetables (baby spinach and frozen peas)

100g ham, torn into pieces

100ml low-fat crème fraîche

50g fresh breadcrumbs

salt and pepper to taste

Directions

  1. Preheat your broiler (grill) to medium heat. Arrange the chicken pieces evenly in a shallow baking dish. Dot the chicken with half of the butter.

  2. Place the dish under the broiler and cook for 7 to 10 minutes, stirring occasionally, until the chicken is cooked through (internal temperature 165°F).

  3. While the chicken cooks, place the asparagus and spring vegetables in a bowl. Pour boiling water over them and let sit for 2 to 3 minutes, then drain thoroughly.

  4. Once the chicken is cooked, scatter the drained vegetables and torn ham over the top. Dollop the crème fraîche evenly across the surface and season with salt and pepper to taste.

  5. Sprinkle the breadcrumbs over the mixture and dot with the remaining butter.

  6. Return the dish to the broiler for 5 minutes more until the filling is heated through and the breadcrumb topping is golden and crispy. Serve immediately.

This is a deceptively easy weeknight win, but the 20-minute claim ignores browning the chicken and baking the pie—plan for 35 to 40 minutes real time. Crème fraîche is not a staple at most Charlotte grocers and will force a stop at Harris Teeter or Kroger's specialty section; you can substitute sour cream or Greek yogurt to keep this local, though the recipe won't specify that trade-off. Ingredient costs run moderate—chicken breast and asparagus are reliable Carolina-area availability—but crème fraîche at $3–4 per tub will add $1–1.50 per serving to a dish that might otherwise land under $2.50 per person. It reheats decently if covered, making it a practical family dinner, though the breadcrumb crust loses some crispness on day two.
