Ingredients

1 pound medium to large shrimp, shelled and deveined

2 tablespoons olive oil

1/2 large lemon, juiced

1/2 teaspoon garlic, crushed

1 teaspoon dried oregano

1 tablespoon honey

1/2 teaspoon salt

1 cup plain nonfat Greek yogurt

1/2 cup shredded cucumber

2 teaspoons fresh mint, chopped

1/2 teaspoon garlic powder

Extra fresh mint for garnish (optional)

Directions

  1. Prepare the marinade for the shrimp. In a medium bowl, combine the lemon juice, crushed garlic, oregano, honey, olive oil, and salt. Stir until well blended.

  2. Add the shrimp to the marinade and toss gently to coat all pieces evenly. Cover the bowl and refrigerate for 20 minutes.

  3. Meanwhile, prepare the tzatziki sauce. In a small bowl, whisk together the Greek yogurt, lemon juice (from the remaining lemon half), shredded cucumber, garlic powder, chopped mint, and salt. Mix until completely combined and smooth. Refrigerate until ready to serve.

  4. Preheat your grill to medium heat. Remove the shrimp from the refrigerator. Thread 4 to 6 shrimp onto each skewer and place on a plate. Discard any remaining marinade.

  5. Place the shrimp skewers on the preheated grill. Cook for 3 to 5 minutes on each side until the shrimp turn pink and reach an internal temperature of 145°F.

  6. Transfer the cooked shrimp to a serving platter. Garnish with fresh mint if desired. Serve hot alongside the chilled tzatziki sauce.
