1/2 tablespoon extra-virgin olive oil
1/2 medium yellow onion, finely chopped
2 medium cloves garlic, minced
1 (14.5-ounce) can butter beans, drained and rinsed
1/4 cup canned tomato purée
1 1/2 teaspoons red wine vinegar
1 teaspoon minced fresh dill
1 teaspoon minced flat-leaf parsley
1/4 teaspoon dried oregano, preferably Greek
pinch Pinch of ground cinnamon
Kosher salt and freshly ground black pepper to taste
Directions
Heat the olive oil in a medium saucepan over medium heat. Once shimmering, add the finely chopped onion and cook for 3 to 4 minutes, stirring occasionally, until softened and translucent.
Stir in the minced garlic and cook for another 30 seconds to 1 minute, until fragrant, being careful not to brown it.
Add the drained and rinsed butter beans to the pan, stirring to combine with the onion and garlic mixture.
Pour in the canned tomato purée and red wine vinegar, stirring well to incorporate all ingredients evenly.
Add the minced fresh dill, flat-leaf parsley, dried oregano, and pinch of cinnamon. Stir thoroughly to distribute the herbs and spices throughout the salad.
Reduce heat to low and simmer gently for 30 to 40 minutes, stirring occasionally, allowing the flavors to meld and the beans to absorb the tomato and herb flavors. The mixture should remain warm but not boiling.
Season to taste with kosher salt and freshly ground black pepper. Remove from heat and allow to cool completely to room temperature, about 10 to 15 minutes.
Transfer to a serving bowl and refrigerate for at least 30 minutes before serving, or serve at room temperature. The flavors continue to develop as the salad sits.
