Golden-fried tofu blocks with a crispy exterior and tender interior, seasoned lightly with salt and toasted sesame oil. This Japanese-style deep-fried tofu (atsuage) is served warm to showcase its contrast of textures and can be enjoyed on its own or as part of a larger meal.

Ingredients

2 blocks (350-400 g each) firm tofu blocks

½ teaspoon salt

as needed (2-3 inches deep) vegetable oil for frying

1 tablespoon toasted sesame oil

Directions

  1. Season both tofu blocks evenly on all sides with the salt. Place the salted tofu on a wire rack positioned over a tray to catch any liquid runoff.

  2. Set a second tray on top of the tofu and add weight (such as water or cans) to press it down. Allow the tofu to drain for 1 hour at room temperature.

  3. Pour vegetable oil into a deep, heavy-bottomed pot to a depth of 2-3 inches. Heat the oil to 340°F (170°C). You may add the toasted sesame oil to the hot oil for enhanced flavor.

  4. Once the draining time is complete, remove the weight and tray from the tofu. Pat the surface of each block thoroughly dry using paper towels to remove any remaining moisture.

  5. Carefully lower the dried tofu blocks into the hot oil using long chopsticks or tongs. Fry for 9-10 minutes total, turning once halfway through to ensure even browning on all sides until golden brown throughout.

  6. Lift the fried tofu from the oil and place it on a paper towel-lined rack to drain any excess oil.

  7. Serve the atsuage immediately while still warm and crispy. If not serving right away, allow it to cool and store in an airtight container in the refrigerator for up to one week.
