Peanut Butter and Jelly Granola Bars

Ingredients
¾ cup creamy peanut butter
½ cup honey
1 tablespoon vanilla bean paste
1½ cups quick cooking oats
1½ cups Fruity Pebbles cereal
½ cup dried blueberries
½ cup peanut butter chips
Directions
Line an 8-inch square baking pan with parchment paper and set aside. In a large microwave-safe bowl, combine the creamy peanut butter and honey. Microwave on high power for 1 minute, then stir well. Microwave on high for another minute until the mixture is bubbly and hot; if it's not yet bubbling, add 30 more seconds in the microwave. Stir in the vanilla bean paste until fully combined.
Add the quick cooking oats and Fruity Pebbles cereal to the warm peanut butter mixture. Stir thoroughly until all the oats and cereal pieces are evenly coated with the peanut butter and honey base.
Fold in the dried blueberries and peanut butter chips, stirring until they are distributed evenly throughout the mixture.
Pour the mixture into the prepared parchment-lined pan. Using a spatula or the back of a spoon, press the mixture down firmly and evenly into the pan. Refrigerate for at least 2 hours until the bars are completely firm and set.
Once chilled and firm, cut the mixture into 12 equal bars. Store in an airtight container in the refrigerator for up to 5 days, or wrap individual bars in parchment and foil, place in a freezer bag, and freeze for up to 6 months. To serve frozen bars, thaw at room temperature for about 1 hour or warm in the microwave for about 30 seconds.
