Ingredients
¼ cup lemon zest (from approximately 6 lemons)
¼ cup lime zest (from approximately 8 limes)
20 makrut (Thai) lime leaves
2 stalks lemongrass, roughly chopped
2 cups water
¾ cup Simple Syrup
6 cups soda water, chilled

Directions
In a small saucepan, combine the lemon zest, lime zest, makrut lime leaves, and chopped lemongrass with 2 cups of water.
Bring the mixture to a boil over medium-high heat.
Reduce the heat to low and simmer for 5 minutes to allow the flavors to infuse.
Pour the mixture through a fine-mesh strainer into a glass jar, discarding the solids. Let the infusion cool to room temperature, then refrigerate until chilled.
To prepare each serving, fill a 12-ounce glass with ice cubes.
Add 2 tablespoons of the chilled lemongrass-lime infusion to the ice-filled glass.
Pour 1 tablespoon of simple syrup over the infusion.
Top the glass with approximately ½ cup of chilled soda water.
Stir gently to combine all ingredients. Repeat steps 5–9 to make 11 additional sodas for a total of 12 servings.
