Ingredients

32 ounces frozen baby spinach, chopped

1 teaspoon olive oil

1 medium onion, diced

1 teaspoon kosher salt, or to taste

2 teaspoons curry powder

1/4 teaspoon ground ginger

1/2 cup light coconut milk

1 teaspoon lime juice

3 tablespoons salted peanuts, chopped

2 tablespoons fresh cilantro, minced

Directions

  1. Prepare the spinach according to package directions in a large pot of simmering water. Transfer the cooked spinach to a colander and drain thoroughly, pressing gently with the back of a spoon to remove all excess liquid.

  2. Warm the olive oil in a large skillet over medium-low heat. Add the diced onion, half of the salt, curry powder, and ground ginger. Stir occasionally and cook for about 10 minutes, until the onion becomes soft and translucent.

  3. Add the drained spinach, remaining salt, light coconut milk, and lime juice to the skillet. Stir well to combine all ingredients and allow everything to heat through for 2–3 minutes, stirring gently.

  4. Transfer the curried spinach to a serving dish and top with the chopped salted peanuts and minced fresh cilantro just before serving.
