Homemade Cajun Tortillas

Ingredients
2 tablespoons vegetable oil
1 tablespoon Cajun spice mix
8 plain flour tortillas
Directions
Preheat your oven to 350°F (180°C) or 320°F (160°C) for a convection fan oven.
In a small bowl, combine the vegetable oil with the Cajun spice mix and stir until well blended.
Place one tortilla on a cutting board. Brush the spiced oil mixture evenly over the top surface of the tortilla.
Stack a second tortilla on top of the first and repeat brushing with the spiced oil. Continue layering and brushing the remaining tortillas until all are coated.
Using a sharp knife, cut the stacked tortillas into 8 wedges, as you would cut a pizza.
Carefully separate all the wedges and arrange them in a single layer on one or two baking sheets.
Bake for 6 to 7 minutes, until the tortillas turn golden brown and become crispy throughout. Watch carefully near the end to prevent burning.
Remove from the oven and allow to cool for a minute before serving. They will continue to crisp up as they cool.
