Ingredients

3 medium carrots, peeled and chopped

2 large tomatoes, chopped

3 to 4 cups water

1/2 teaspoon salt, or to taste

1/2 teaspoon crushed red pepper or black pepper, or to taste

Directions

  1. Bring 3 to 4 cups of water to a boil in a large pot over medium-high heat.

  2. Add the chopped carrots to the boiling water and cook for 10 minutes.

  3. Add the chopped tomatoes to the pot and continue cooking for 8 to 10 minutes more, until the carrots are very tender.

  4. Carefully transfer the cooked vegetables and cooking liquid to a blender (work in batches if needed). Blend until completely smooth, adding more water during blending if the mixture is too thick.

  5. Pour the blended soup back into the pot and warm over low heat if needed.

  6. Season with salt and crushed red pepper or black pepper to taste. Stir well and serve hot.
