2 tablespoons olive oil

½ yellow onion, chopped

1 red bell pepper, chopped

1 jalapeño, seeded and chopped

2 stalks celery, chopped

4 boneless skinless chicken thighs

2 teaspoons Cajun seasoning

12 ounces andouille sausage, sliced

32 ounces low-sodium chicken broth

1 14-ounce can diced tomatoes

1 cup okra, chopped (fresh or frozen)

Kosher salt to taste

2 tablespoons fresh parsley, chopped

1 cup cooked brown rice for serving

Directions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the chopped onion, red bell pepper, jalapeño, and celery to the pot. Sauté, stirring frequently, until the vegetables are softened, about 12 minutes.

  3. Add the chicken thighs and Cajun seasoning, stirring gently to coat with the seasonings and partially brown the chicken, about 1 minute.

  4. Pour in the chicken broth, add the canned diced tomatoes with their juice, sliced andouille sausage, and chopped okra. Stir well and bring the mixture to a full boil.

  5. Reduce the heat to medium-low, cover the pot, and simmer for about 30 minutes, until the chicken is cooked through (internal temperature of 165°F), the vegetables are completely softened, and the flavors have melded together.

  6. Taste the soup and adjust seasoning with kosher salt as needed. Stir in the fresh chopped parsley.

  7. Divide the cooked brown rice among four bowls and ladle the chicken soup over the rice. Serve hot.
