Ingredients

1 cup Oaxaca cheese, heaping

¼ cup Manchego cheese, shredded

½ cup Chihuahua cheese, shredded

½ cup Rajas peppers, sliced

Directions

  1. Preheat a small cast-iron skillet or baking dish in a 375°F oven for 5 minutes until heated through.

  2. While the skillet heats, tear or cut the Oaxaca cheese into bite-sized pieces and combine in a bowl with the shredded Manchego and Chihuahua cheeses, tossing gently to mix.

  3. Spread half of the cheese mixture evenly into the hot skillet.

  4. Layer the sliced rajas peppers over the cheese.

  5. Top with the remaining cheese mixture, spreading it in an even layer.

  6. Return the skillet to the 375°F oven for 10 to 12 minutes, until the cheese is completely melted, bubbly, and creamy throughout.

  7. Remove from the oven and serve immediately while hot, with warm tortillas, fresh vegetables, or crusty bread for dipping.
