1 can (15 oz) chickpeas, drained, rinsed, and patted dry
1/2 cup whole rolled oats (not quick-cooking)
1/4 cup flax seeds
1/3 cup honey
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 cup mini chocolate chips
1/4 cup chopped walnuts
Directions
Add the drained and patted-dry chickpeas to a food processor and pulse for about 1 minute until they are finely chopped and break down into small pieces.
Add the whole rolled oats and flax seeds to the processor and pulse several times to combine with the chickpeas until the mixture is evenly blended.
Pour in the honey, vanilla extract, and salt. Process for another minute until all ingredients are thoroughly incorporated and the mixture becomes a smooth, cohesive batter.
Transfer the batter to a bowl and gently fold in the mini chocolate chips and chopped walnuts until evenly distributed throughout.
