Ingredients

1/3 cup balsamic vinegar

2 large boneless, skinless chicken breasts

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon extra virgin olive oil

1 medium onion, chopped

2 cloves garlic, peeled and minced

1 pint cherry or grape tomatoes, halved

4 large fresh basil leaves, sliced

Directions

  1. Pour the balsamic vinegar into a small saucepan and bring to medium-high heat. Allow it to simmer until reduced to a thick, syrup-like consistency, about 5-7 minutes. Set aside. Meanwhile, place the chicken breasts on a cutting board and carefully slice each one horizontally in half to create four thin cutlets. Season both sides of each cutlet evenly with salt and pepper.

  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers and is nearly smoking.

  3. Carefully place the seasoned chicken cutlets in the skillet in a single layer without overlapping. Let them cook undisturbed for 1 minute to develop a golden crust. Flip each piece and immediately reduce heat to low. Cover the pan with a lid and cook for 10 minutes, or until the chicken reaches an internal temperature of 165°F. Transfer the cooked chicken to a serving plate.

  4. Return the skillet to high heat and let any remaining liquid reduce until it forms a thin glaze that coats the bottom of the pan. You should be able to drag a spoon through and see the pan surface briefly. Lower the heat to medium, add the chopped onion, and stir frequently for 2 minutes.

  5. Add the minced garlic to the pan and cook for 30 seconds, stirring constantly.

  6. Add the halved tomatoes to the pan and sauté for 2 minutes, stirring gently until they are heated through but still hold their shape.

  7. Arrange the chicken cutlets on a serving platter. Spoon the tomato and onion mixture over and around each piece of chicken. Drizzle the balsamic reduction evenly over the top and garnish with fresh sliced basil. Serve immediately.
