Ingredients
10 slices Arnold Whole Grains 100% Whole Wheat bread slices
3 cans Cans of water-packed tuna, drained
1 Red bell pepper, finely diced
Green onion, diced
1 Small cucumber, peeled and finely diced
1 tablespoon Sriracha sauce
⅔ cup Sesame oil
1 Lime, juiced
Salt
Freshly ground black pepper
¼ cup Sesame seeds
Directions
Place the 10 slices of whole wheat bread on a toaster oven rack or regular toaster and toast until golden and crispy, about 2-3 minutes.
While the bread is toasting, open the three cans of tuna and drain the water completely. Transfer the drained tuna to a large mixing bowl and break it into small, bite-sized pieces with a fork.
Add the finely diced red bell pepper, diced green onion, and diced cucumber to the tuna. Pour in the sriracha sauce and sesame oil, then stir all ingredients together until well combined.
Squeeze the juice from the lime into the bowl and stir again to incorporate. Taste the mixture and season with salt and freshly ground black pepper to your preference.
Spread a generous portion of the tuna salad mixture onto each of the five toasted bread slices. Sprinkle the sesame seeds evenly over each topped slice.
Top each salad-topped slice with another slice of toasted bread to form five complete sandwiches. Cut each sandwich diagonally in half and serve immediately while the bread is still warm.
Comments
All ingredients are standard stock at every Charlotte chain, though sesame oil and sriracha might require a quick scan at Food Lion or ALDI if you're not a regular buyer—no special trip needed. At roughly 70 cents per serving for canned tuna, sesame oil, and fresh produce, this is solidly affordable, though the real cost driver is using fresh peppers and limes year-round. The stated 18 minutes is honest for assembly once tuna is drained and vegetables chopped, but expect 25 to 30 minutes total if you're starting from whole ingredients and seeding peppers. This is a weeknight winner for families or a quick lunch, though it doesn't improve on day two—the bread absorbs moisture and the fresh vegetables wilt, so eat the same night or keep components separate.
