Ingredients
3 tablespoons cornstarch
¾ cup sugar
¾ cup water
¼ cup strawberry gelatin powder
8 oz. cream cheese, softened
¼ cup powdered sugar
2 teaspoons milk
1 teaspoon vanilla extract
1 graham cracker pie crust
3 cups fresh strawberries, sliced

Directions
In a small saucepan, whisk together the cornstarch and sugar. Gradually add water while stirring until the mixture is completely smooth with no lumps. Place over medium heat and bring to a boil, stirring frequently. Once boiling, continue to cook and stir for 2 minutes until the mixture thickens and turns translucent.
Remove the saucepan from heat and stir in the strawberry gelatin powder until fully dissolved. Allow the glaze to cool to room temperature, then refrigerate for about 30–45 minutes, stirring occasionally, until it reaches a slightly thickened consistency (it should be pourable but no longer runny).
In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and well combined. Spread this cream cheese mixture evenly across the bottom of the prepared pie crust.
Arrange the sliced strawberries in a single layer over the cream cheese filling, covering as much of the surface as desired.
Carefully spoon the thickened strawberry gelatin glaze over the berries, working gently so as not to disturb them. Refrigerate the pie for at least 1 hour until the gelatin is fully set and firm to the touch.
Serve chilled, topping each slice with a generous dollop of whipped cream.
