24 Oreo or chocolate wafer cookies
1/4 cup unsalted butter, melted
16 oz lowfat cream cheese, room temperature
2 large eggs
1/2 cup sugar
1/4 cup heavy cream
1 tablespoon heavy cream
1/3 cup Nutella
Directions
Preheat your oven to 325°F. Prepare an 8x8-inch baking pan by lightly greasing it, then line the bottom and sides with parchment paper, allowing some overhang for easy removal later. Set aside.
Add the Oreo or chocolate wafer cookies to a food processor and pulse until they break down into fine, uniform crumbs resembling sand.
Pour the melted butter over the cookie crumbs and pulse again until the mixture is evenly moistened and holds together when pressed.
Transfer the buttered crumbs into the prepared pan and press firmly with the bottom of a measuring cup or your hands to create an even, compact crust layer.
Bake the crust for 12 minutes, until it appears set and slightly darker at the edges. Remove from the oven and allow to cool for 5 minutes while you prepare the filling.
Clean out the food processor and add the softened cream cheese, eggs, sugar, and 1/4 cup of heavy cream. Pulse and blend until the mixture is completely smooth and airy, scraping down the sides of the bowl once or twice to ensure all ingredients are fully incorporated.
Pour two-thirds of the cheesecake filling evenly over the cooled crust. Reserve the remaining one-third of the filling in the food processor.
Add the Nutella and 1 tablespoon of heavy cream to the remaining filling in the food processor. Pulse until smooth and fully blended with no streaks of Nutella remaining.
Carefully pour the Nutella-swirled filling over the plain cheesecake layer. Using a thin knife, skewer, or wooden spoon, drag it through the batter in a back-and-forth zigzag pattern to create a marbled, swirled effect. Do not overmix; a few bold strokes create the best visual.
Bake for 30–35 minutes, until the edges are set and no longer jiggle when the pan is gently shaken, but the very center still has a slight wobble (about a 1-inch circle in the middle). This ensures a creamy texture when chilled.
Remove the bars from the oven and allow them to cool completely at room temperature (about 1 hour), then cover and refrigerate for at least 8 hours or preferably overnight. This resting period is essential for the cheesecake to set properly and the flavors to meld.
Once fully chilled, carefully lift the bars from the pan using the parchment overhang. Cut into 16 equal squares using a sharp, wet knife, wiping the blade between cuts for clean edges. Serve chilled and store any leftovers covered in the refrigerator.
