Ingredients
4 1/2 cups cooked brown rice
1 1/2 teaspoons low-sodium bouillon granules
1/4 cup chopped scallions
Directions
Wash your hands thoroughly with soap and water before preparing this dish.
Cook the brown rice according to package directions in unsalted water until tender and fluffy.
Transfer the cooked rice to a large bowl and while still warm, add the low-sodium bouillon granules and chopped scallions. Toss gently but thoroughly until the bouillon is evenly distributed and the scallions are well incorporated throughout the rice.
Divide into 1-cup portions and serve immediately as a side dish.
Comments
Brown rice takes 45 minutes to cook, so the stated 30-minute time misses reality by a full quarter-hour—budget 50 minutes total if you're starting from dry rice. The three ingredients are available at every Charlotte chain and cost under $4 for five servings, making this genuinely cheap weeknight fuel. Scallions are a Southern staple, and bouillon granules sit in the pantry year-round, so there's no special trip. The real caveat is that this is a simple side dish, not a standalone meal; it reheats fine but it's at its best the same night, fresh and mild.
