Ingredients

¾ cup unsweetened almond milk

½ cucumber, unpeeled

½ cup fresh mango chunks

1 cup fresh pineapple chunks

1 handful fresh spinach or 3 spinach ice cubes

½ cup ice cubes (if not using spinach ice cubes)

1 tsp raw honey (optional)

1 scoop vanilla protein powder (optional)

Directions

  1. Add the almond milk to a high-powered blender first.

  2. Add the unpeeled cucumber, mango chunks, and pineapple chunks to the blender.

  3. Add the fresh spinach (or spinach ice cubes) and ice cubes, if using fresh spinach.

  4. If desired, add the honey for extra sweetness and the vanilla protein powder for added nutrition.

  5. Blend on high speed until completely smooth and creamy, about 1–2 minutes.

  6. Pour into a glass and serve immediately for the best flavor and texture.

Every ingredient lands at any Charlotte grocery chain, with no special stops needed: almond milk, fresh or frozen mango and pineapple, spinach, and vanilla protein powder are standard stock at Harris Teeter, Walmart, ALDI, and Kroger. The 5-minute stated time is honest—blending takes that long. At roughly $3.50 to $4.50 per serving (driven by the protein powder and fresh or frozen tropical fruit), this is a solid weeknight breakfast or lunch. The main caveat is that this is a single-serve recipe; families need to scale up or blend multiple times, and smoothies don't keep well overnight, so it's same-day drinking only.
