Ingredients
1¼ cup All-purpose flour
1 cup Yellow cake mix
1 tbsp Granulated sugar
¾ tsp Baking powder
¼ tsp Salt
2 large Large eggs
1¼ cup Milk
1 tsp Vanilla extract
2 tbsp Butter, melted
2 tbsp Sprinkles, divided
1 cup Powdered sugar
1½ tbsp Heavy cream
1 tbsp Milk for glaze
Whipped cream, optional
Directions
In a large bowl, combine flour, yellow cake mix, sugar, baking powder, and salt. Mix together until evenly distributed.
In a medium bowl, beat the eggs together. Add vanilla extract and 1.25 cups milk to the eggs and whisk until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should have no visible dry flour. If the batter is too thick, add a small amount of milk to reach your preferred consistency.
Heat a griddle or non-stick skillet over medium heat and lightly coat with cooking spray.
Just before cooking, fold about 1 tablespoon of sprinkles into the batter to distribute throughout.
Pour ⅓ cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook on the other side until lightly golden brown, about 1-2 minutes. Repeat with remaining batter.
For the glaze, combine powdered sugar, 1 tablespoon milk, and 2 tablespoons melted butter in a medium bowl. Stir until smooth.
Add the heavy cream to the glaze and stir until you reach your desired consistency. The glaze should be pourable but thick enough to coat the pancakes.
Stir the remaining sprinkles into the glaze.
Arrange cooked pancakes on plates, drizzle with vanilla sprinkle glaze, and top with whipped cream if desired. Serve warm.
Comments
The 45-minute time is honest for making pancakes from scratch with homemade whipped cream, though most cooks will finish faster. Ingredient availability is excellent—cake mix, flour, eggs, and dairy are staples at every Charlotte chain, with no special trips needed. Cost per serving lands around $1.50–$2.00 when you account for bulk flour and eggs against a box of cake mix, making it reasonable for a weekend breakfast. The main caveat is that this is a same-night dish best eaten warm; pancakes do not reheat well and leftovers turn dense and stale.
