Watermelon-Mint Popsicles with Blueberries

Refreshing homemade frozen popsicles bursting with fresh watermelon and cool mint, studded with sweet blueberries. A naturally sweet treat that's perfect for summer, made with simple whole ingredients and no added dairy or gluten.

Ingredients
6 heaping cups diced seedless watermelon
3 tablespoons granulated sugar
½ tablespoon fresh lime juice
Pinch of salt
1 tablespoon fresh minced mint leaves
½ cup fresh blueberries
Directions
Add the diced watermelon, sugar, lime juice, and a small pinch of salt to a blender. Blend until completely smooth, about 1–2 minutes, scraping down the sides as needed.
Add the minced fresh mint to the blender and pulse briefly, just until the mint is evenly distributed throughout the mixture; do not over-blend.
Distribute the fresh blueberries evenly among the popsicle molds, placing a few berries in the bottom of each one.
Pour the watermelon-mint puree slowly into each mold, filling to just below the top to allow room for expansion during freezing.
Insert popsicle sticks into each mold, positioning them in the center. If your molds have built-in sticks, insert them according to manufacturer instructions.
Place the molds in the freezer and freeze for at least 6–8 hours, or until completely solid. For best results, freeze overnight.
To remove the popsicles, run warm water over the outside of each mold for a few seconds to loosen them, then gently push the sticks upward to release. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
